It may be fall, but we can’t help but want to eat smoothie bowls as long as we can until it gets really cold.

We’ve been introduced to the wonders of dragon fruit this summer and have been experimenting with it in smoothies and smoothie bowls. The thing with dragon fruit is, pink dragon fruit has super bright, neon pink colored flesh and anything you make with it will give whatever you’re making that incredible color.

For this smoothie bowl though, we’re combining dragon fruit with equal parts blueberries so the color isn’t quite the neon pink of dragon fruit, but more of a pink-purple combo. The flavor is a nice balance of sweetness with a little bit of tartness from the blueberries, which is perfect if you don’t want an overly-sweet smoothie bowl to start your day. We’ve topped this bowl off with beautiful raspberries and blueberries that are at the end of the season now (get them if you still can!), but of course you can choose some more seasonal fruits if you prefer. We’ve also added some coconut chips ( here are some with the skins on like we used), hemp seeds, and almond butter. Granola is also a great option for any and all smoothie bowls!

What is dragon fruit?

Dragon fruit is the fruit of a cactus plant that is native to southern Mexico and Central America.

It’s also known as pitaya, pitahaya, and strawberry pear, and the two most common types have white or bright pink flesh. They’re characterized by their outer skin which looks like dragon scales (hence the name) and speckled black seeds. It tastes like a mix between a kiwi and a pear.

It’s low in calories, high in fiber, and contains a good amount of antioxidants. Studies show that dragon fruit may improve insulin resistance, liver fat, and heart health.*

You can buy fresh dragon fruit or it’s now also sold in frozen chunks, which make it super useful for smoothies and smoothie bowls. With dragon fruit becoming more and more popular, it’s nice to know we can get it more easily in supermarkets and grocery stores.

How to get that neon pink dragonfruit glow

For a more intense dragonfruit color, use only 1/2 cup frozen blueberries and 1/2 cup more of dragonfruit.

You could also substitute the berries altogether with frozen mango chunks, which lend a lighter color to the smoothie bowl and that neon pink from the dragonfruit shine through.

Dragonfruit Blueberry Smoothie Bowl

Serves 2

2 frozen bananas

1 cup frozen dragonfruit or 1/2 fresh dragonfruit

1 cup frozen blueberries

1/2 vanilla pod, seeds scraped or 1/2 tsp vanilla extrac (optional)

Toppings

Fresh raspberries

Fresh blueberries

Coconut chips

Almond butter

Hemp seeds

  1. Add all ingredients to a food processor or high speed blender and blend on high until completely incorporated. The mixture should be smooth, like ice cream.

  2. Serve in bowls and top with toppings of choice. We like fresh raspberries & blueberries, coconut chips, almond butter, hemp seeds, and granola.
