Cochinita Artichoke Tacos with Refried Beans and Avocado X-Nipek

Learn how to make these Mexican cochinita tacos from scratch! Cochinita tacos originate from the south of Mexico in the state of Yucatan. Traditionally, they’re made using pork that’s marinated in citrus juice and annatto seeds sauce, which give them a characteristic burnt orange color. In this class, we’re recreating that classic sauce and making a delicious plant-based version using artichoke hearts.

Mushroom Quesadillas with Epazote and Salsa Tatemada

Learn how to cook a vegan take on the classic quesadillas de hongos (mushroom quesadillas) that are traditional in Mexico City. For this class, we’re making a delicious almond ricotta “cheese” from scratch that works beautifully with the mushrooms. To top it off, we’re serving it with a succulent salsa tatemada (charred sauce).

Enchiladas Rojas with Spiced Winter Squash Filling 

Enchiladas are corn tortillas that have been filled and rolled and served with chili sauce on top. There are enchiladas of all colors and flavors—the filling is different all throughout Mexico, and it is undoubtedly one of the most eaten and loved dishes in the country. In this class, we’re making vegan enchiladas with a delicious filling of pan-fried squash and greens.

Tamales with Hongos and Salsa Verde

Tamales are one of Mexico’s most famous dishes! They’re made with corn masa (maize dough) stuffed with either savory or sweet stuffing and steamed inside corn husks or banana leaves. They’re eaten for breakfast, lunch, and dinner, and are almost always served at any festivities. The variety of tamales is vast-there are all kinds of different fillings in different states of Mexico ranging from beans and greens to cheese, meat, and/or dried fruit. 

The origins of tamales are prehispanic. Originally, the corn dough was made with stone-ground corn and whipped by hand. There’s an old saying in Mexico, “you have to have a good hand for tamales“. Thankfully, nowadays we have electric mixers and other tools we can use to make the process faster and easier. After this class, you’ll know how to make tamales from scratch—something a lot of people (even in Mexico!) don’t know how to do. 

In this class, we’ll make savory tamales with a delicious mushroom and salsa verde filling (the level of spice is up to you!).

Chilaquiles with Glazed Tofu and Sesame Seeds

Chilaquiles are fried tortillas cut in a triangle shape (like corn chips) served covered in red, green, or mole sauce, and topped with elements like cream, onion, and avocado. It’s a popular hangover breakfast since it’s packed with flavor and super comforting. In this class we’re making green chilaquiles with glazed tofu, vegan sunflower sour cream, pickled red onions, avocado, and sesame seeds.
