Today, we’re embracing the vibrant, nourishing ingredient that some of you hate, Kale, a vegetable that is rich in nutrients! If kale’s rough texture and earthy taste have ever daunted you, in this video, I reveal secrets to turning Kale into a delicacy you’ll crave and you’ll never look at kale like you have before! (I told you cooking vegetables doesn’t have to be always complex)

In this recipe we explore 4 recipes showing kale’s potential beyond the salad bowl, Kale chips, sauteed citrus Kale, and did you know that I will show you how you can make chimichurri from Kale? Stay until the end of the video because I am very excited to show how it is made and I know you will love it! This recipe is a dish that even those who just started going vegan would like!

Ways to Cook Kale

Kale Chimichurri

2 tbsp. of Red Onion, small diced

½ Cloves of Garlic, small diced

1 bunch of Kale steamed about 1 ½ cups and chopped finely

Chili flakes, to taste

¼ Cup finely chopped parsley

Juice of 1 ½ limes

½ cup Extra Virgin Olive Oil, cold pressed

Black Pepper to taste

Basic Beginner Kale Chips

3 tbsp. of Nutritional Yeast

3 tbsp. Extra Virgin Olive Oil

Salt & Black Pepper to taste

20 medium Kale leaves, no stem

Citrus Sauteéd Kale

3 tbsp. Olive Oil

1 clove of grated Garlic

2 tbsp. of Shallot, small diced

Zest of 1 Orange

Zest of 1 Lime

2 pressed cups of raw Kale

Lime juice to taste

Salt to taste

Toasted Pepitas to finish

Red Kale Raw Salad

4 cups of raw kale, cut into thin strips (chiffonade)
The pulp of 1 avocado
2 tbsp extra virgin olive oil
Salt to taste
Black pepper to taste
The juice of 1 lime
1/4 cup of red onions sliced thinly
1/2 cup sliced radishes
3 tbsp Toasted sunflower seeds

Assembling

Steam Kale

  1. Have an ice bath ready (bowl with lots of ice and little amount of water)
  2. Bring the water in your steamer to a boil
  3. Add the clean kale leaves and cook for 10 seconds. Open and stir, and cook for 10 more seconds
  4. Take the leaves out and place them in the ice bath until they are cold. Take them out using your hands and squeeze as much water as you can.
  5. Place them in the salad spinner and spin them out until the leaves are relatively dried, so they last you longer in the fridge
  6. Store them in an airtight container or a ziploc bag

Basic Beginner Kale Chips

  1. Preheat your oven at 275°F for 15 minutes
  2. In a bowl, mix the nutritional yeast, oil, pepper and salt
  3. Massage the kale leaves gently with the mix
  4. Place the leaves over a sheet tray with parchment paper
  5. Cook at 275° for 20-40 minutes depending on the size

3 Ideas to Take Them to the Next Level

  1. Adding a mix of your favorite spices
  2. Add citrus zest to the mix for an aromatic experience
  3. Make an herb pesto and massage them with it

Citrus Sauteéd Kale

  1. Heat a pan on high and sear the kale until it starts getting “seared” getting some color.
  2. Lower the flame, add 3 tbsp of olive oil and add the grated garlic and shallots. Coom for 2 minutes until you see them getting some color.
  3. Add the citrus zest and cook for 30 seconds or until it starts smelling delicious
  4. Add the kale, then mix with the other ingredients, season with salt and some lime or lemon
  5. Top with toasted pepitas for crunchiness

Red Kale Raw Salad

  1. ​In a bowl massage the kale with avocado, salt, pepper and olive oil for about 30 seconds. Since kale is chiffonade we do not need to work it so much because is very thinly cut however if you are planning on just chop the kale roughly I’d recommend to massage a little longer until is wilted and soft.
  2. Then add the lime juice and the toppings, radishes onions and sunflower seeds
  3. ​Taste and rectify seasoning. Enjoy!
